Our functional cheese range includes Restricted Melt Technology (Lo Melt Chedda range). Restricted Melt is a Processed Cheese which is specially developed to withstand cooking or baking at high temperatures or for long periods of time, without losing its shape, consistency and form. The melt characteristics of this product range can be tailored to become a bespoke blend of two or more products in grated, shredded or diced format and each having its own unique melt characteristics. It is also possible to blend Cheddar cheese with LoMelt Chedda in various ratios to produce unique product performance.

LoMelt

Lo Melt Chedda – the perfect solution for Cheese Grillers ensuring no ‘melt out’ but delivering a juicy cheesy flavour.

This range of products is used extensively in the cheese griller range of sausage products which helps maintain a juicy cheesy mouthfeel in sausages without the cheese melting out onto the braai or into the frying pan.
